Watermelon and Feta Cheese Salad with a Honey Lemon Drizzle and Fresh Mint
This is an easy, tasty summer salad and very pleasing to look at. Don’t be afraid, you do not have to be too ambitious, it is really not to hard to do. We did not measure the squares, we just cut them quickly and estimated the size. It really only took about 20 minutes. The dressing can be made the day before and drizzled on right before serving. We added blueberries just to carry off the Red, White and Blue theme. If you don’t feel like being fancy, just combine the ingredients in a bowl and it is equally as good.

Serves: 8
Ingredients:
1 small watermelon
1 - 8oz block good Feta cheese
1 or 2 - 8 oz boxes blueberries (optional)
Lemon Zest, from 2 lemons
2 Tbs honey
2 Tbs cold water
Fresh mint to garnish
Directions:
Cut the feta into slices about ¾-1 inch thick
Cut the watermelon into slices the same thickness as the Feta cheese slices. Cut again into 1 inch strips.
Mix the honey with the lemon and water.
Place the feta nd the watermelon squares in an alternating pattern on serving platter.
Surround the watermelon and feta squares with the blueberries.
Drizzle the dressing on top of the feta and watermelon.
Sprinkle mint leaves on top
