Cookie Dough Healthy Overnight Oats With Sunflower Seed Butter, Maple Syrup, Chia Seed, Oat Milk And Dark Chocolate Chips

Overnight oats have become a big trend and why not? They are easy and inexpensive to make. Of course, you can go to the store and spend a lot of money on a tiny container or take less than 10 minute to make a big bowl that will last for days. There are so many variations, just use your favorite milk, dairy or non dairy, your favorite sweetener vegan or not, your favorite rolled oats and chia seeds to thicken it up and add more nutrition and fiber. This recipe incorporates sunflower seed butter to add a roasted nut flavor without the actual nuts for those with nut, not seed allergies. You can of course substitute any nut butter for them. This is a hit with kids, just don’t tell them it is good for them and don’t tell them it is not really cookie dough.

Prep Time: 5 minutes

Refrigeration time: minimum 6 hours

Serves: 3-4

Ingredients:

2 cups oat milk

1 ½ cups rolled oats

3 Tbs sunflower seed butter

3 Tbs Chia seeds

3-4 Tbs maple syrup

1 tsp pure vanilla extract

3 Tbs dark chocolate chips

Directions:

Mix all of the ingredients together well and refrigerate overnight . You may keep them in a large bowl and put in individual containers the next morning. You may also want to adjust the sweetness of the oats to your liking by adding more maple syrup the next day.
