Chocolate Overnight Oats With Chia Seed, Oat Milk, Maple Syrup and Cocoa Nibs

Overnight oats seem to be the thing now for breakfast. At grocery stores they are pretty expensive. You can make them at home for a fraction of the cost. The best part is that you can change them up. Put whatever you want or do not want into them. We have nut allergies in our house so we used Sunflower Seed Butter, but you can change it up with Almond Butter or Peanut Butter. If your vegan, use oat milk and coconut yogurt. If your not use regular milk or plain yogurt. We have added a little cocoa nibs for crunch, but feel free to make them decadent by adding chocolate chips. We did top it with Dark Chocolate and strawberries. It tastes like desert, but makes a healthy breakfast or an afternoon pick me up snack.

Prep Time: 5 minutes

Sitting Time: at least 8 hours or overnight in refrigerator

Ingredients:

1 cup rolled oats

1 cup oat milk (or regular milk)

1 cup plain greek yogurt (or coconut milk yogurt for vegan)

3-4 Tbs sunflower seed butter (or any nut butter)

1 Tbs Chia seeds

2 Tbs Cocoa Nibs (optional) can use chocolate chips

2-3 Tbs chocolate chips (optional)

Square of chocolate from a chocolate bar (optional)

Directions:

  1. Mix all ingredients in a small bowl. Put in refrigerator. When ready to serve. Spoon into glasses.

  2. Top with strawberries or other fruit or chocolate pieces
