Watermelon Stars Drizzled in Lime and Topped with Feta Cheese and a Chiffonade of Mint Leaves

Summer is here, and so is watermelon. There are so many ways to serve a watermelon salad. Here, I have cut them into stars to celebrate Memorial Day. I may do the same for July 4th. Watermelon is fresh on its own, but squeezing lime over it just adds another dimension that compliments the watermelon. Use a good Mexican or South American Queso Fresco or a good Feta Cheese and top with shredded mint and now you have something different and fresh.

Ingredients:

½ Watermelon, sliced into ½ inch thick slices

Juice of 2 limes

8 oz block of Feta Cheese or Mexican Queso Fresco

Handful of mint leaves, shredded (chiffonade)

Directions:

  1. Slice watermelon

  2. Squeeze lime over watermelon

  3. Sprinkle with Cheese and shredded mint

  4. You can substitute shredded cilantro for a different flavor
