Watermelon Margarita with Mezcal and Ancho Chile Verde Liqueur , Rimmed dipped in a Salty Jerk Seasoning

Perfect refreshing drink for any Taco Tuesday. Watermelon juice is easy to make, refreshing and great to keep in the refrigerator to drink after exercise for rehydration or on a long hot day.

Prep Time: 10 minutes

Serves: 4

Ingredients:

5 cups chopped watermelon

¼ cup Peloton de la Muerte Mezcal

1/4 cup Ancho Chile Verde Liqueur

½ cup fresh lime juice

Ice

Jerk Seasoning for Rim:

2 Tbs prepared jerk seasoning

1/4 tsp salt

1/2 tsp finely grated fresh lemon zest

or

1 tsp Tajin (a prepared mexican spice)

For the Garnish:

4 slices watermelon

4 dehydrated lime wheels

Directions:

1. Place all of the watermelon in a blender with a handful of ice. Blend until smooth.

2. Pour the watermelon juice through a sieve or a cheesecloth into a pitcher to remove excess pulp

3. Add the lime juice, the Ancho Chile Verde Liqueur and the Mezcal to the pitcher

4. Mix the jerk seasoning with the salt and the fresh lemon zest and sprinkle it on a small plate

3. Run a lime wedge around the edge of the glass

4. Dip the glass into the salt/jerk seasoning

5. Pour in the margarita and add fresh ice

6. Garnish with a dehydrated lime wedge and a slice of watermelon
