Nice Cream Smoothie Bowl, Made with Frozen Bananas, Vanilla and Maple Syrup. Topped with Berries and Dragon Fruit

Nice cream is the new trend for a healthy ice cream alternative. It is popular with vegetarians and vegans or just about anyone that wants a healthy, cold treat. It is very simple, quick to make and consists of just frozen fruit, tossed in a blender with maple syrup for vegans or honey for others. It is a healthy alternative to ice cream and it can be served for breakfast or dessert. It is basically a thick smoothie in a bowl. I like mine topped with berries and nuts. Popped quinoa is a nice crunchy alternative for those with nut allergies. I used a teaspoon of Blue Spirulina powder. The dark blue color is derived from the blue green algae by extracting the Phycocyanin within it, which is a dark blue pigment which gives the powder it’s color. It is very healthy and filled with protein, vitamins, minerals, carotenoids and antioxidants. Spirulina helps control appetite, is easily absorbed by your body and promotes good bacteria in the gut. It is best to buy the powder on the internet, as it is difficult to source otherwise, but widely available overnight from Amazon by many different brands. I think beautiful food always tastes better. I added fresh mint leaves and edible borage flowers from the garden, however, these are always optional.

Prep Time: 5 minutes

Time to Freeze Fruit : 2 hours or overnight

Ingredients:

4 bananas, sliced and frozen

1 Tbs maple syrup or honey

1 tsp vanilla

1 tsp blue spiralina powder

Assorted berries

Optional Toppings:

Dragon Fruit - scooped into tiny balls with a ½ inch scoop

Blackberries and blueberries (frozen)

Almonds (optional)

Directions:

Blend the frozen bananas with the honey and vanilla and spiralina powder until smooth. You can add a tablespoon or two of oat milk or almond milk or any other liquid to thin out the nice cream, but you do not have to do this, the bananas alone are fine. Blend until the color and texture are consistent.
