Mango Salsa
MANGOS AGAIN!! It’s Mango Mania Week. This 10 minute recipe can be served as an appetizer one night and then the leftovers can be served over a grilled fish or chicken the next day. It’s also good over eggs the next morning. Scramble the eggs, top with salsa, serve with corn tortillas. Be careful though, it is so fresh and yummy, you might not have any leftovers. Double, triple or quadruple the recipe.

Serves: 4 as an appetizer with chips
Ingredients:
3 cups chopped mango
4 plum tomatoes, seeded and chopped
½ cup chopped cilantro leaves
¼ cup diced red onion
Juice from 1 large lime
3/4 tsp salt
½ jalapeno, chopped and seeded (optional)
Directions:
Combine all of the ingredients. Serve with tortilla chips
