Guacamole with Pomegranate Seeds

Guacamole is everyone’s favorite. Just the good old fashioned variety. Occasionally we look for ways to jazz it up. The addition of pomegranate seeds to a classic guacamole recipe is delicious. It just adds the perfect amount of crunchy, juicy sweet flavor.

Prep Time: 15 minutes

Serves: 4-6

Ingredients:

3 Hass or 1 ½ Florida avocados

Juice of 1 lime (¼ cup)

½ tsp salt

3 Tbs roughly chopped cilantro leaves

3 plum tomatoes, coarsely chopped

1 jalapeno, diced, seeded or not, depending on level of spice preferred

⅓ cup pomegranate seeds (⅓ pomegranate)

Directions:

  1. Remove the avocado from the skin. Cut into medium cubes. Place in a bowl and mash lightly with a fork or potato masher. Leave some chunks.

  2. Stir in the lime juice. Use fresh lime juice, not bottled. It makes a big difference in taste. Stir in cilantro, tomatoes, jalapeno and salt.

  3. Place in serving bowl. Top with pomegranate seeds

  4. Serve with tortilla chips or crudite
