Grilled Nectarines with Truffled Burrata, Lemon Zest and Honey

Grilled Nectarines with Truffled Burrata, Lemon Zest and Honey

Prep Time: 25 minutes

Cooking Time: 4-5 minutes

Serves 4-5

Ingredients:

7 Nectarines with the skin on and then each fruit sliced into 4 or 5 slices

4 Large Balls of Fresh Burrata, I have used Black Truffle for optimal flavor. If you can not find Black Truffle Burrata then brush each burrata round with a 1/4 teaspoon of truffle oil or just use plain burrata.

1/4 of a small red onion. Slice the onion in half and then cut slim slices from only 1/2 of one of the halves.

Marinade/Dressing;

3 Tbs of a good, robust olive oil

2 Tbs honey

Zest of 1 lemon

2 Tbs fresh lemon juice

For garnish:

Fresh whole basil leaves

Coarse salt (May use truffle salt if you wish)

Fresh ground pepper

Mix all of the ingredients for your dressing. Toss the dressing with the nectarine slices in a small bowl. Place each nectarine slice on a stovetop grill pan or your BBQ grill for just a minute or two until slight grill marks appear. Do not flip the nectarines, grill only on one side. Reserve the bowl with the left over juices. Do not throw the marinade out. When done, toss the nectarines back into the same bowl with the reserved juices. The nectarines will let more juice out making your dressing even more flavorful. This will become your dressing to drizzle.

Arrange the burrata on your serving platter. Place your nectarines around the burrata. Top with the onion slices. Pour the juice that remains in the bowl of nectarines over the top of the burrata and the nectarines. Top with chopped fresh basil, coarse salt and freshly ground pepper. Serve at room temperature or reserve in the refrigerator for a half hour and serve cold.

My favorite Burrata with Truffles. Widely available. Although a 1/2 teaspoon of truffle oil or truffle salt sprinkled over each individual Buratta will give you the flavor you are looking for
