Today’s pick from the garden radishes and cucumbers, freshly picked today for recipes to share this week. If you love gardening check out Baker’s Heirloom Radish seeds. Most normal everyday grocery stores do not carry them, however, specialty stores do. The easiest ones to find are the Chinese Watermelon Radishes. You can purchase them in Miami at Whole Foods Market, owned by Amazon.
Radishes are the perfect thing to grow for those of you who are impatient. 20-30 days form planting and you will have crunchy, delicious, fresh radishes of every color. These radishes from left to right: 1. Malaga (A Purplish Red Polish Variety) 2. White Icicle 3. Pusa Gulabi Pink (great for growing in high heat) 4. Another Malaga. 5. Purple Pusa Jumuni 4. Another White Icycle 5. Spanish Black from the 1600’s. 6. Another Pink Pusa Jamuni. All available from Baker Creek Heirloom Seeds.
Avocado Toast:
Prep Time: 5 minutes
Cooking Time: 3 minutes
Ingredients:
Sliced Sourdough Bread
Cheese or Butter to spread. Try Boursin cheese, Ricotta Cheese, or Goat cheese or just butter. Don’t underestimate how good just plain butter can be!
Radishes, any color
Avocado slices
1 poached egg
1 teaspoon white vinegar
Everything Bagel Seasoning (Many stores offer this, I purchase it at Trader Joes) Just a pinch of salt and pepper, with a few sesame seeds and some granulated garlic can be a good substitute.
Directions:
Lay out your bread. Spread with topping of choice. Suggestions above. Top with layers of avocado and layers of radishes in between. Poach your egg. Sprinkle Everything Bagel Seasoning on top. Top with sliced green onions.
How to Poach an Egg:
Bring a small saucepan to a simmer. Add enough water so that when you drop in your egg, the water will cover it by at least ½ an inch. Add 1 tsp white vinegar. Swirl the water and add the egg. Poach for 4 minutes and remove with a slotted spoon. Dry on a paper towel. Invert onto your bread, avocado toast. If you are poaching more than one egg at a time. Do not swirl the water. If you are poaching more than one egg at a time, use a large frying pan filled with water.
