Airfryer BBQ Corn Riblets Served with a Honey, Lime , Sriracha Mayo Dipping Sauce
This is a great recipe for summer BBQ’s and summers abundant sweet corn harvest. Whether your a vegetarian and these are your BBQ ribs or your serving them as a side dish to your barbecued meats, they are sure to please. Again, another Tik Tok sensation and a very popular food trending now, Corn Cobb Riblets. The corn is both crunchy and sweet and easy to eat. The BBQ rub is delicious with the creamy Sriracha mayo. Eat them right off the cobb just like you would ribs. Popular with adults and kids alike.

Airfryer Cook Time: 15 minutes
Oven Cook Time: 35 minutes

Ingredients for the Corn Riblets:
2 ears corn, shucked
1 Tbs olive oil
¼ tsp cumin
½ tsp garlic powder
½ tsp smoked paprika
¼ tsp onion powder
½ tsp salt
freshly ground pepper
Fresh chives for garnish
Ingredients for The Honey, Lime, Sriracha Dipping Sauce:
½ cup mayonnaise
juice of ½ lime
3 Tbs Siracha
1 Tbs honey
Directions:
Cut the ends off of the corn so that you can stand the corn on its end and cut down through the middle. This is going to require a very good knife. Be careful not to cut your fingers as it will take significant pressure to cut through the cobb. Cut the cobb in half lengthwise and then cut again lengthwise so that you have four long pieces.
Mix the marinade and brush each piece of corn on all 3 sides.
Place corn in your airfryer. Leave some space around the riblets so that the air can cook them and crisp them sufficiently.
If you are using a conventional oven, the process takes a little longer. Preheat your oven to 375 degrees. Place on parchment lined cookie sheet allowing space between each piece of corn so the air can circulate and crisp your riblet. If you have a convection oven, bake the riblets for about 30-35 minutes. If you have a conventional oven, it may take another 5 minutes. You know that the riblets are done when they start to curl.
While the corn is baking, mix all of the ingredients for the dipping sauce
Serve with the Sriracha, Lime, Honey, Mayo on the side. Garnish with fresh chives
